What do you do with your left over Jack o Lantern? Why puree it to cook with of course! It really isn't difficult, you can finish within an hour or two, and you are left with healthy, delicious FREE pumpkin! An added bonus is how cool your kids think it is to have Jack o Lantern pie, cookies, or bread. To make pumpkin puree: cut your jack o lantern into 2-3" pieces and cover with water. Bring to a boil.
