Pumpy Umpy Umpkin Muffins
1 cup unbleached all purpose flour
1/2 cup sugar
2 teaspoons baking powder
1 1/2 teaspoons cinnamon
1/4 teaspoon ginger
1/4 teaspoon kosher or sea salt
4 Tablespoons butter cut up
1 cup jack o lantern pumpkin puree or 1 cup canned pumpkin
1/2 cup evaporated milk
1 egg
1 Tablespoon vanilla

Sift flour sugar baking powder and spices, cut in butter. In separate bowl mix pumpkin, milk, eggs, and vanilla, pour into flour mixture, gently stirring till just combined. Fill muffin tins 1/2 full with mixture and sprinkle some cinnamon-sugar on top. Bake for 25 minutes.
