Jack o Lantern bread
2 cups flour
2 teaspoons pumpkin pie spice
2 teaspoons baking powder
1/4 teaspoon kosher or sea salt
1/2 teaspoon baking soda
1 can Libbys pumpkin puree or 2 cups jack o lantern puree
1/2 cup Splenda
1/2 cup dark brown sugar
1/2 cup evaporated milk
2 eggs
1/2 cup chopped pecans if desired
Oven at 350 degrees, combine flour, spices, baking powder and baking soda in a large bowl. Blend pumpkin, Splenda and brown sugar, milk and eggs in large mixing bowl. Add flour mixture, mix just till moistened. Pour into a greased bread pan and sprinkle with nuts. Bake 60 to 65 minutes or until a toothpick comes out clean from center of loaf. Cool in pan 10 minutes, remove to wire rack to cool completely.
