Oatmeal Muffin Mix and recipe

I love to keep this easy mix on hand to make Sunday morning muffins. A dear friend requested the recipe this morning, and I thought I would share it here. This would make a great gift too. I put some of this mix in a pretty jar in and tucked it in a basket filled with apples, mini pumpkins and a pumpkin scented candle for Jeff's sister Jackie as a hostess gift recently.

Oatmeal Muffin Mix

3 3/4 cups unbleached all purpose flour
3 cups old fashioned rolled oats
2 1/4 cups firmly packed dark brown sugar
2 Tablespoons baking powder
Combine all ingredients in a large bowl, mix well. Store in an airtight container up to 3 months, or in your freezer indefinatly.

Muffins

3 cups muffin mix
1 cup milk
1/2 cup melted butter
1 egg slightly beaten
1/2 teaspoon cinnamon
1/2 cup chopped walnuts if desired
Oven at 350, combine all ingredients except walnuts, stir gently just till moistened. Stir in walnuts, spoon into muffin tins. Sprinkle with cinnamon sugar and a few rolled oats. Bake until a toothpick comes clean fron center of muffin and edges are golden brown. Enjoy! Love, Jodi
